How could morphing ability run in their blood? Logically, for DNA to absorb/mutate that would take generations, and isn't morphing fairly new in Aldrea's day?
1. One of the things I always liked about Cassie was that there was never an emphasis on her skin color. On the same note, it was never ephasized that Marco was Hispanic or that Jake was Jewish. Even when K. A. Applegate noted these things, the whole point was that they were average kids. It was their personalities - not the superficial things - that made them individual.
2. If Electra is an alien, she probably wouldn't say colored. If Cassie is the first human she sees, it is very likely that she wouldn't note skin color at all. If Electra has mostly seen white people, she might note that Cassie has darker skin, but that's the extent of it.

Oh. Wait. Sorry, that was applying logic.
(And be my guest, I stole it myself anyway!)
