I love that you are as tea-obsessed as I am. For proper temperatures, I was taught that visual cues are a simple, easy way to judge: boiling for blacks, 'fish-egg' (the simmer just before a boil) for oolongs, moderate steam with no bubbles for greens, and light steam with no bubbles for whites (pu-erhs, if you're into them, are just below a boil). ooo I'm not a lapsang fan myself, honestly, but maybe someone reading this is. Have you tried Adagio?

I hadn't yet tried Adagio, mostly because they describe their lapsang as "approachable, not like those other nasty, overly-smoky lapsangs" (my paraphrase :D ). However, it might be worth it to grab a 3oz. sample. I've heard good things about their teas in general.
