Bash tab completion really burns my toast. You can't, for exmaple, cd /etc/hos{tab}, and expect it to complete to hosts, but you have to go back and change it to vi before the tab completion will work

That behaviour is configurable, so fortunately you can inactivate it. I don't remember how, but the Bash manual might be a good starting point:
