Truffles

One can never have too many chocolate recipes. I tend to use the recipe from the baking bars (rather than the bags listed below) - but it's pretty much the same. The recipe is definitely tweakable flavor wise. Go crazy ( Read more... )

Wow so what does Cayenne Pepper do to the Ganache? I've never thought of using something spicy for something sweet...(though we do put pepper on our cantalope (sp?)).

This sounds yummy! I love truffles will have to make some!

The cayenne adds a sneaky little kick to the chocolate. When you pop one in your mouth, you get the silky texture of the chocolate melting in your mouth and the buzz from sugar/caffeine ('specially the buzz if you bitter chocolate) and then... THEN.. your tongue starts to tingle and your mouth gets all nice and warm ;) A rather nice side effect, I think.
