Funny, I got lettuce & other salad fixing in my grocery shoping too. Not as fancy or high protein as your recipes. Just lettuce, carrot, celery, tomato, diced walnuts, raisins in vinegrette.
Currently, watercress, & chicory, with pears, walnuts, and blue cheese. Also, tabbouleh, the traditional way of 80% chopped parsley to other ingredients and just a few flecks of bulgar wheat. Although today I was mostly hungover and had a huge burrito for lunch to get through the day...
I've been high-proteining it at the campus cafeteria salad bar: lettuce, cucumber, carrots, olives, chickpeas, kidney beans, blue cheese, whole hard-boiled egg, marinated tofu cubes, & sunflower seeds. Honey mustard, blue cheese, ranch, or Ceasar dressing. Yum yum.
