Menu Plan: week of June 1

To start, I'm going to post a funny salad I just made with Memorial Day (U.S. holiday yesterday) leftover barbecue ingredients. I actually think I've mentioned this before, but yeah, my mom always did that with roast or ham. I mean, chicken and turkey too, but you'd expect that. I don't think I've ever seen her do it with hamburgers, but I'd probably try it!

hehe it was probably on BC, and probably ages ago! I just happen to remember because I always thought my mom was weird! LOL She also used to make cracker salad - crunched up saltines, chopped onion, miracle whip, and black pepper. See, weird!

Hey Ant!!! LOVE the idea of meat salad... of course chicken and turkey, but I never have heard of meat. I would like that. My mom would always slice any leftover steak the next day for steak sandwiches, always on mayo-ed bread. Mmmmmmmm....good stuff. Thanks for joining Mindful Menus - LOVE having you!!!
