Yeah, I don't know why I made that the subject line, either, because this is all about the menu planning, but it was in my head and I had to let it out. I wrote this a couple of days ago and keep forgetting to post it!

Well, the Food Network chef who wrote up the recipe has lived in London and Dubai, so technically you can't blame the colonials :)

And seriously, that salad was SO good! It doesn't need much dressing, and I could just feel us getting healthier as we ate it!

It was so so so good. I'm making it again this week because I've really been trying to get Kale in our diets! Nothing against pumpkin seeds, but they didn't add anything to this. And, the ones I bought weren't crispy; they were sort of chewy like they needed to bake longer. All in all, they took away from the recipe.

However, in fairness, I'm confused by them. I watched the episode where she made this, and the "pepitas" she pulled out didn't look anything like pumpkin seeds. They looked like dark pine nuts. I even googled a bit (from my phone in the grocery store) to be sure I should be getting pumpkin seeds, and at least Wikipedia thought I should. But I won't bother in the future. Totally not needed. If I think I need a crunch, I might toast some pine nuts, but really they're not necessary at all.
