Here's a yummy kugel recipe, requested by a friend from High School.
Base:
1 12oz package egg noodles
4 eggs
4 oz cream cheese (1/2 a "bar" package), softened but not melted
4 oz melted butter (I use Smart beat sticks that are half butter, half healthy stuff)
1/8 cup Splenda for baking (or you can use 1/4 cup sugar)
8 oz. fruit nectar (I used guava today, peach, pear are also good.)
1 tsp vanilla extract
8 oz. sour cream (light or fat free is ok.)
Optional treats:
1/4 c. Raisins, craisins, or maraschino cherries. (I didn't use these this time but I often do).
Topping:
1 tsp cinnamon
2 tbsp Splenda for baking (or 1/8 c. sugar)
1 c. crushed bran flakes (or you can use corn flakes)
4 oz melted butter (same as above)
Preheat oven to 350.
Cook noodles according to package directions and drain. Spray a 9x13 baking dish with no-stick then add noodles.
Mix eggs, cream cheese, butter, sugar/splenda, nectar, vanilla, and sour cream and beat with a whisk for a few minutes. The cream cheese will not completely break up, but that's ok. Pour evenly over noodles.
Mix cinnamon, splenda/sugar and crushed bran flakes together and spread evenly over the noodles. Pour the 2nd butter evenly over the topping.
Bake 50m-1h. Serve warm. Leftovers should be reheated.
