I would say art history and anthro have a lot in common! Maybe talk about how as an anthro major you were always most interested in the art aspects of the major (like pottery and archeological stuff?) and that your internship further cemented your interest in art, since then you have only become more interested in art history and want to dedicate your career to resarching art history.
Btw grad schools will love the part about the rigorous research practices (maybe leave out the part about focusing, makes it sound like you are unfocused)

Here is the very very first draft of my SOP. Moving forward I think I need to consolidate my experience and work in my future research interests, and work on paragraph transitions and general flow. I cannot decide whether to work in a personal narrative. This seems like a contested strategy. What are your opinions?

This is late but maybe you could specify why exactly you would like to study at Courtauld? Write about any professors you'd like to work with, any modules you are intending take and any specific exhibitions/collections in the Courtauld archives that relate to your research.
