Well, the first thing I would suggest is making it part of your objective. Example:

Objective: Looking for a job outside of veterinary medicine that utilizes my skills and challenges me professionally.

After this, I would suggest highlighting your skillset.

Skills:
Computers: Microsoft office, Microsoft Windows, Internet Explorer (...etc.)
Typing: XXwpm (typing test)
General: account management, problem solving, multi-tasking, customer relations, word processing, data entry, customer service (...etc.)

Then, under experience... make sure under each job that you highlight the skills and accomplishments you've done that are not animal related. Customer service, sales, account management, money handling. Instead of 'Veterinary technician' try 'Health Technician'. Downplay the animal part, and up-play the general use skills.

Yeah, you can subdivide it if you want.

Microsoft Word
Microsoft Powerpoint
Microsoft Buttmunch (kidding)

You should be able to tweek the vet jobs to have non-vet related applications, too. I'm just running out the door right now, so I can't type more.

For typing tests... www.google.com 'typing speed test' ;).
