Easy Vegetarian Recipes

I'm calling out to my friends for easy vegetarian recipes. Elly is headed back for her second year of college and will be renting an apartment this year instead of living in the dorms. This summer she decided to try out being a vegetarian and she has minimal cooking skills. I wanted to put together cookbook of easy recipes to send her this fall

Is she vegan or veg? If shes strait veg Ill pm you a gang of easy/cheap yummy things to whip up. If shes vegan Ill have to look... I can hardly believe Mouse is on her own now!!! :)

Vegetarian, not vegan. I'd love it if you could send me some of your recipe/meal ideas for her.

Isn't it crazy that she's off on her own? Last year she lived in the dorms so she didn't have to worry about feeding herself.

Vegan or Veg? I'm guessing Vegetarian for starting out. If she has minimal cooking skills, then I would stick with what she knows best. Heating up food in the micowave! Will she have a dorm with a fridge/microwave, or will she have a whole kitchen? I lived on Lean Cuisine, or Annie's frozen meals. You just have to start reading labels all the time, meat gets stuck into so many things you'd never imagine (lard is in baked goods, gelatin is in so many things). Ramen noodles, there's only one kind that's vegetarian (Oriental Top Ramen) at Cash Wise. The Asian markets have a larger selection with more vegetarian Ramen noodles

Vegetarian for starters, she's never eaten much meat at all, mostly poultry. I'm not sure if she's ever even eaten beef before. She will be renting a house with some friends so she will have a full kitchen and has shown an interest in learning how to cook. I taught her a few recipes when she came to see me this summer.
