The Tate modern is already on the list. As is borough market and hopefully a Banksy walking tour.

In Paris: I really enjoyed "Mike's Bikes Tours" got to see the city, by bike instead of by bus. Looking at the Eiffel tower from the park below it also seemed to be pretty cool too.

I don't remember anything specific about Amsterdam that I'd go back for. I meet great people and just had too much fun :-)

Just make sure you feed yourself well and often!
