Looks fatnastic overall... and there's a lot you could with the design of the menu. I'm not sure about the "to begin" and "to sin" titles, but I love the "to indulge". Maybe, unless this is totally irrelevant to your assignment, you could rework the thematic presentation of the menu.

In terms food, it sounds really posh. Perhaps the only thing I might change is the elk steak served rare... it might be a bit presumptuous to not give your customers the option of how their steak is cooked.

Anyway... now I'm all riled up and looking forward to a Shane-cooked meal... how does this sound: I buy whatever ingredients you want, you cook them, we eat them over a bottle of wine.

You have a good point, and as much as I think it a sin (no pun) to serve a beautiful piece of meat well-done, the customer's paying for it either way.

PS. Make sure you've got at least a couple vegetarian and/or vegan alternatives.

Good call, a couple of the items could be made vegetarian or vegan with a few adjustments (minus the cheese or bacon, etc.) but you're right, grass-grazers are taking over.
