Only fresh ones squeak. I've never had them from a grocery do that. I love the squeak too:)

Oh, I've had the occasional squeak from store bought... but most are just mushy.

Yeah. It says somewhere that once they no longer squeak, they aren't curds, they're just cheese that wasn't aged properly.
