I swear, late fall should secede from the rest of the year and start going by the name "Soup Time." All I want to do, once it starts to get all blustery and cool, and the scarves come out, and it's cold enough for a heavier coat, but not cold enough to keep me inside, is dedicate my nights to the cooking and eating of soup. Someone should make me a "soup" lj icon. I would use it to represent everything that is good and warm and wholesome about my life.
Speaking of soup, I made amazing potato chowder, last night. I am fucking serious when I say chowder too. We aren't just talking about extra thin instant potatoes, with some chopped veggies here (but in a pinch, I will rock that to.) You want the run down? Here it go:
4 large potatoes cut into 1/2 inch cubes.
3 large carrots again with the 1/2 inch cubing.
1 medium bunch of celery cut into 1/2 inch slices.
2 medium, onions coarsely chopped.
4 pieces of garlic minced
All that shit got sauteed in the bottom of a stock pot with salt, thyme, parsley, oregano, and pepper (I didn't have any dill, which I would have used in oreganos stead. They are both good, but they don't get along.)
Once that was allowed to get a good sweat, I added a quart of unsweetened soy milk and a quart of water, some frozen corn, and a can of green beans, and brought things to a boil (which took a while, this is a lot of fucking soup we are talking about) and then added 3 tablespoons of veggie base, and 2 cups of potato flakes.
My dudes, this shit was epic! I enjoyed it with a huge hunk of crusty bread, an ice cold pilsner, and a pretty girl (who needless to say was quite impressed)
