I applaud the attempt, but probably won't be trying this one myself. I've tried that stir-fry sauce before... pretty nasty. Made me swear off powdered sauce packages. ;)
Do you mean that your roll wasn't rolled tight enough and that when you bit into it, it fell apart or did you mean to imply that your rice was overcooked? I didn't really understand the comment.
If you poured the sauce over the rolls, they would have gotten soggy and fallen apart so if your intention was to make a traditional sushi roll but with the beef/veggie inside, that may have resulted in the problem you found. Sauces served over sushi rolls are usually quite thick and used more as a garnish or to 'nap' the roll rather than being the saucy preparations in non-sushi dishes.
