Arroz Doce (Portuguese Sweet Rice) time to make 40 min 20 min prep 2 cups water 1 cup white rice 2 cups hot milk (whole works best) 1 cup sugar 1 fresh lemon rind cinnamon Bring water to a boil in medium saucepan. Add rice and cover, simmering for 20 minutes. Add milk, sugar and lemon rind, stirring constantly until thickened to oatmeal consistancy, about 15-20 minutes. It will also thicken some while cooling. I can't say if this is good or not. I'm allergic to lentils sadly. I'm allergic to most of the recipes posted here actually and I'm too lazy to make the others. I'm not really sure why I'm a member come to think of it.....
that's really too bad....lentils can be tasty sometimes i took a look at the recipe, and it looks tasty. i don't know if i'll use it this time, but i'm going to save it for another day at the very least...thanks!
My fave festive meal is black bean chili. So easy!
* 1 onion, chopped * 2 cloves garlic --> saute the above on medium high heat in a big pot until onions turn translucent (max five mins, I always add the garlic after a few minutes to avoid burning it)
* 1 t cumin * 1 t coriander * 1/3 c water --> Add the above and saute for a minute
* 1 green pepper, small and 1 red pepper, small: chopped --> Add and saute for two minutes
Then, add and bring to a boil in between each ingredient: * one can whole tomatoes (18 oz), chopped * 1c mushrooms, chopped * 2 cans black beans, rinsed * 1 - 1.5 c salsa * Any other veggies you want (I use broccoli, zucchini, carrots) * 1 can kernel corn
Put a lid on the pot and simmer for 5-10 minutes.
Serve piping hot with sour cream, cilantro, and cheddar cheese for toppings and nacho chips on the side. Can also be used as a bean burrito filling.
This website: http://www.vegcooking.com/ had a really interesting homemade tofurkey recipe up around (American) thanksgiving. They have a ton of recipes and a guide for veg holiday cooking. (It's put on by Peta)
