Several friends on FB requested recipes for things I've mentioned making lately - so I decided to post them here as well in case any of you might also enjoy them. Included are notes of my modifications and due credit as to their sources. Enjoy! :D

PIZZA ROLLS
~From Katie Miller, with some modifications. ;) This might look complicated, but it's really not hard at all. If it was, I wouldn't make it, hehe.
1 c. warm water
1 tsp. salt
2 tsp. sugar
2 Tb. oil
3 c. flour (I usually use 2 c. unbleached/white flour and 1 c. whole wheat or 7-grain)
1 Tb. dry yeast
1 tsp. oregano
1 tsp. basil
1 c. chopped pepperoni (or chopped hot dogs, sausage, ham, or ground beef)
1 1/2 c. shredded Mozzarella cheese
3 Tb. Parmesan cheese
medium size can pizza/pasta sauce, warmed in saucepan
Combine water, salt, sugar, and oil in mixer bowl. Add flour and yeast together, and let mixer stir until dough is thick. Add more flour if needed, until dough pulls away from sides of bowl into one ball. Let mixer continue stirring for 5 minutes, or knead by hand for 10 minutes. Place dough in greased bowl and let rise about 45 minutes - or if you're in a hurry (as I usually am) just let it rest 5-10 minutes while you gather the rest of the ingredients and go kiss your hubby or your cat, as the case may be. ;)
On floured surface, rolls dough into 12x16" rectangle. Sprinkle with oregano and basil, then top with chopped meat and grated cheese. Carefully roll dough, jelly roll style, starting at one of the 12" ends. Pinch dough into a "log". Use dental floss (a sharp serrated knife also works) to cut "log" into 8 slices. Place in greased 9x13" pan, let rise 25-35 minutes, until almost doubled. Sprinkle tops with Parmesan cheese.
Bake at 350 degrees for 20-30 minutes, until rolls are golden brown. Serve with warmed tomato sauce.
Makes about 3-4 servings, depending on how hungry everyone is. ;)

GOLDEN PARMESAN POTATOES
~From Cheri Cross, with some modifications. ;) This was in the amazing box of recipes from FB friends that Jac and Sam compiled as a wedding present. Thanks again to all who participated - I've had a great deal of fun trying many of them already. :D
3 lbs. or 6 large potatoes
1/4 c. flour
1/4 c. parmesan cheese (powdered)
3/4 tsp. salt
1/8 tsp. pepper
1/3 c. margarine (I used half the amount of real butter plus a little olive oil and a sprinkle of salt)
1/2 tsp. parsley flakes (optional)
1/2 tsp. garlic salt (optional)
Preheat oven to 350. Place margarine or butter in 9x13 and melt it in oven, being careful not to burn it.
Peel and cut potatoes into bite-sized chunks. Put flour, parmesan, salt, and pepper into a gallon ziploc bag. Add in the parsley and garlic if desired. Mix together, then add potatoes and shake until they are well-coated with mixture. Put potatoes in the pan with melted margarine/butter.
Bake for 1 to 1 1/2 hours, or until golden brown and crispy, turning at least once.

HERBED COTTAGE CHEESE
My sisters and I ate at a restaurant in September 2009 with Lisa Stepanian and Brandy Payne, and really liked the herbed cottage cheese they served there. Lydia recreated it for us at home later, but I never asked exactly which herbs she put into it. When I wanted to make it myself, I ended up grabbing the Italian Seasoning off the spice rack - and it seemed to do the trick. It's so ridiculously easy I feel silly calling it a recipe, hehe. The way I usually serve it is to put several large spoonfuls of cottage cheese on a plate, atop a lettuce leaf if we have any at the time. Then I just put a few shakes of the Italian Seasoning on the cottage cheese, and top it off with several fresh tomato slices. It looks like a salad plate in a high-class restaurant and tastes super yummy, and it takes all of 5 minutes to prepare. :)
