One of Jodi's coworkers has a daughter who has decided to eat vegan. She is looking for information on how she can change what the family eats to accomodate her daughter and have her daughter stay healthy. Do you have any recommendations on books, cookbooks, or anything else that she could use?

Hey Dave! Tell them to check out www.tryveg.com. That lists all the foods which you can substitute for meat, dairy and eggs, and they will send you a free vegetarian starter kit (which is really vegan). As far as vegan cookbooks, there are a ton of them. I always cook from scratch though, so I'm not too familiar with specific ones. There are books on cooking vegan for kids as well. I would do an online search. Or, you can check out www.veganstore.com; they sell a bunch of cookbooks. That's the company I used to work for. I would recommend "Diet for a New America", too, which is a great read. It delves into all the reasons (ethical, environmental, health, etc.) for eschewing animal products. Well, I hope that helps. There's so many resources out there now that going vegan is really easy. If she has any more questions, please let me know.
