Wendy wanted this recipe so I typed it up for her - thought I would share to my other friends as well. Under the cut is the recipe for Enchilada Addiction. I know I have posted Alfredo Sauce and Broccoli and Potato Chowder before as well but if you want that again let me know. ( Read more... )

You know, this is the first time I've viewed your journal in a style other than my own. Your header is GORGEOUS! And mixes three of my favorite pairings, if you think outside the box. Spike/Dawn, Xander/Dawn, and Xander/Spike. Plus the implied Spike/Dawn/Xander. And that's just hot.

The recipe is amazing - it makes me drool!

1) 1/5 liters of water
45 ml = 3 tablespoons but I often round to 50
15 ml - 1 tablespoon
1 teaspoon is 5 ml

2) Cornmeal is cornmeal - ummm I have to get it from the International food aisles of our carrefour - in the spanish section - also where I pick up the black olives, already pitted. oh but it might be called semoule de mais. In french... but you know you could probably try it with cornflour and see how it goes ... corn meal tends to be more coarsely grounded then a flour though.

3) All the spices mentioned are dried and easily found in the spice section... except the darn cornmeal as listed above.

4) Tomato puree has more water in it - tomato paste should be tomato paste - ummm perhaps it is called tomato concentrate there? (In Belgium so everything is in French so trying to figure out the approp. translations)

Hubby said although it is not generally as fine as what you would call corn flower it is not as coarse as what we would call polenta (what in the UK is coarse corn meal). Honestly it should matter all that much - this recipe is extremely forgiving and lends itself to experimentation.
