Do it. DO IT. You actually don't really get a huge bacon taste in the cake - just a smoky sweetness that would make you go, "Hmm... what's that flavor I can't quite place?". Unless you already know it's bacon. And then it's like, "BACON! OM NOM NOM!!!". Anyway, it balances really well with the salty sweetness of the toffee. Delicious.
What you say makes sense, but I can't get past the bit where it seems really, really weird. Are there different types of bacon that you might use and are some better-suited than others?
I almost tried the maple-flavored bacon the first time I made them, but after tasting one, I think your basic smoke-cured bacon is perfect and the maple would have been too much.
I'm pretty sure Meg got to try these on New Year's Eve, so you'll have to ask her opinion. :)
