You may have difficulty finding fried cheese curds now that the State Fair is over. Besides, Wisconsin's cheese curds are really better.
Where in Minnesota are you going? If you're headed to the Twin Cities, they're like any metro area -- lots of good things to eat depending on what you're looking for. I could recommend a few restaurants if you tell me what you like. Also, check out the City Pages -- the local free alt-newspaper -- they have a Best of 2005 on their website with lots of interesting tidbits.
Beyond that, two very Minnesotan foods I recommend are 1) Wild rice. In pilaf, as stuffing, in soup, whatever. In particular, I love cream of chicken and wild rice soup. 2) Fresh walleye. Only if it's been caught fresh from one of the northern lakes.
Both of these items make me think of The St. Paul Grill. It's a pricey place, but it's a Minnesota establishment and the food is darn good.
