It was my birthday today (and still is for the next 15 minutes *g*), and I made biscuits to take in to work for the occasion.
Cinnamon or Ginger Biscuits
4 oz butter
2 oz sugar
5 oz self-raising flour
½ level teaspoon cinnamon (or ground ginger)
Cream butter till soft, add sugar and beat till light and fluffy. Sift in flour and cinnamon (or ginger) and bind together to form a dough.
Make 16 balls, place on ungreased baking tray well apart and flatten slightly with fork.
Bake on centre shelf, Gas Mark 4 (350 deg.) for 15-20 minutes till just firm and slightly coloured. Leave to cool for a few minutes, then transfer to a wire rack to cool completely (if you can resist them that long...!).
Coffee Sandwich Biscuits (from Alison Richards WINOLJ)
3 oz plain flour / 1 oz ground rice / 3 oz butter
2 oz caster sugar / 2 tsp instant coffee / 1 tsp water
1 oz halves walnuts (optional)
Sieve flour & ground rice together; cream butter & sugar.
Mix coffee with water and beat into creamed butter/ sugar
Fold in dry ingredients and mix
Roll out & cut into rounds (walnuts on top if wanted) (makes 16 rounds = 8 sandwiches)
Bake at 350 F/Gas 4 for 15 mins (may take less)
When cool sandwich with buttercream - 1 oz butter, 2oz icing sugar, 1 tsp inst. coffee, 1 tsp milk or cream.
