I do agree, looking back now I realized I should have picked something else to make. But I also think that (as I told Jim) when two people are married, only one (out of fairness to everyone, you can't have two good cooks married) is suppose to be able to cook delicious meals....so when he got interested in cooking and started making WONDERFUL, DELICIOUS stuff....well any cooking talents I had went out the window!

If you wanna mix seafood and Mexican though, we love fish tacos. It sounds gross, but it's really yummy. You just use your favorite fish sticks, breaded fish sticks, and fry them up in a skillet, then cut them up, put them into a soft taco, and all the usual fixings. Delicious and easy!
I think what made them less appealing to me, is the fact I had to fry them (according to the recipe) I think they would have turned out better if I had baked them like enchiladas...but that would make them seafood enchiladas! lol.
Anyways, very true, if I don't need to work (because Jim is the chef of our family) then I should not cook. I'll just look cute and clean up the dishes and kitchen after he cooks!
