Dessert after Corned Beef Dinner

We're having some friends over on Monday and we're going to try out this corned beef recipe for dinner.

Does anyone have some good ideas for dessert that would particularly follow such a meal well?

Baked apples or pears in a liquor/butter/spice sauce. Maybe with a little whipped cream, cream anglaise, or ice cream.

Oh, so we aren't good enough to give opinions? Well!

Anyway, I really liked this (http://allrecipes.com/Recipe/Glazed-Corned-Beef/Detail.aspx) corn beef recipe. The one thing to maybe do is to defatify the corned beef before hand. I know most of it is interstitial, but whew, the one I got was about 80% fat.

I would recommend cheesecake or icecream as those things are never unwanted.
