for soy: tempeh is a better option because it is less processed (hence higher fiber and nutrient retention). it also has a better protein digestibility because of the fermentation process.

i would also recommend legumes, nuts/seeds, and grains as a regular part of your diet to have variety: chickpea dishes, black bean burgers, quinoa or spelt. hemp seeds are actually amazing for their nutritional profile, even if you just supplement with hemp protein.

Have you had the opportunity to speak to anyone currently out there working in the field right now, and see if there might not be other non-corporate things available that would still focus on the same sort of research? Government-funded, maybe?

the only contact i have had has been students/professors. that's a good point though..there ought to be some government programs? i'll find someone to talk to.

Omg you should totally go for a phd in nutrition! You'd be good at it. And also, there is so much pseudo-science in the world of nutrition right now, we need more legit nutrition-scientists/research.

That way your research may be (partially) funded by the school itself... through other non-corporate mediums.
