Soup!

Ok, I'm kind of on a soup kick right now. Which is mainly to say, I'm on a "consuming" soup kick, and not a "making & consuming" soup kick.

I'd like that to change!

Who's got soup recipes for me? Preferably stuff I can freeze or can the extras of? Non-meat preferred, but not required...

And out of curiosity, do you do any menu planning for the week, or do you just go by the seat of your pants? I'm trying to get more into the former, but I'm finding it difficult at present...

Yup, understand all that. I think I'm mainly looking to get to consistency, as I'll plan brekkie and lunch for a while...then I won't....then I will.

Hoping a moderate goal of two planned dinners a week might help me shop more, and therefore help on the above.

Great timing! I'm having a soup party on Saturday, so I expect there'll be at least 8-10 different kinds of soup there, and I can report back the kinds I like most. If you're in town, you're welcome to come by and taste even if you don't contribute your own. Poke me for details.

Personally, I have immediate plans to make clam chowder tomorrow and chili later in the weekend. My chili has lots of meat, though, but I suspect you can find a zillion other good recipes.

I'm pretty good on the chili front (although I've recently been realizing that I like meat chili more than the veggie chili's I've been focusing on, so that might change), but I'm intrigued to hear about the chowdah (as we call it in New England).

I'm back, btw, but tomorrow is shot I think - and I'm still in hibernation/unpacking/settling mode - but hopefully next time!

We started with this one: http://www.skinnytaste.com/2010/12/broccoli-cheese-and-potato-soup.html

And found that an Irish cheddar + a full-cream gouda are better than her suggested cheeses. It adds a few calories, but not that many. The bulk of the soup is still broccoli.

(It can be made in a stand blender (we did it the first time we made it) but an immersion blender makes it a snap ( ... )

I think I always forget to put the honey in! And I've never used the garnish either. I do add about a tablespoon of thai red curry paste. It adds a little extra dimension to the curry flavors. This soup freezes really well.

I also roast the squash with cinnamon and butter in the dent, rather than boil it.
