3 steps to going vegetarian

The best advice I have found so far about converting to a vego diet has come from a booklet I got from the vegetarian society, titled 'Go Vegetarian!'. There is an article in it called 'A Simple 3 Step Way to Go Vegetarian' that says that the average family actually only eats 8 or 9 different dinners repeatedly. I have a mushroom curry recipe that is very easy and tasty. Not sure if it contains anything you are intolerant to...don't think so. Calli has it from me if I remember rightly or I can give it to you. I did the transition to vegetarian when A and I moved in together and I don't cook meat at home. I still struggle sometimes though I have to admit and we do eat fish which helps. However, I have accumulated a number of vege recipes and books these last few years if I can be of help.

1 brown onion
2 garlic cloves
bunch fresh coriander
1 tbsp balti/rogan josh paste
2 x 400g tins chopped tomatoes
500g mushies
natural yoghurt to serve

Cook onion. Add garlic,coriander, curry paste. Cook for 1 min. Add tomatoes and mushies. Bring to boil and reduce heat, cook uncovered for 25 mins or until thick.

Hardly gourmet but great for a quick dinner!

yum, sounds extremely delicious! Sadly dairy is out for me too, so I probably won't be able to do that one.

Risotto with mushrooms, green beans, and pine nuts. Replace rice with barley for a change

Pumpkin and sweet potato soup (make up with red curry spices and coconut milk if you're avoiding dairy, or for a change)

Can you get wheat-free couscous? I suppose you could use rice, or maybe quinoa or millet - add chickpeas, spring onions or red onions, cumin-y spice mix, maybe fried eggplant cubes.

Dukkah! On anything.

Tuna-free salade nicoise

White bean and garlic dip, with dippy things

You said vegetarian, not vegan, so quiches of various delicious sorts, loaded with spinach and rocket and suchlike

mmm... risotto...

That all sounds fab :) I forgot that pumpkin soup is something we already have quite often--it is delicious and easy to adjust to various dietary requirements.

Yep, am still eating eggs from the back yard chooks so will definitely be having lots of quiches :)

shortblack has an eggplant curry recipe she might give you

I go for lots of pasta dishes, tomato based usually but also avocado

roast veggie salad on greens with feta and toasted pine nuts (except maybe not the feta)
