2 garlic cloves
bunch fresh coriander
1 tbsp balti/rogan josh paste
2 x 400g tins chopped tomatoes
500g mushies
natural yoghurt to serve
Cook onion. Add garlic,coriander, curry paste. Cook for 1 min. Add tomatoes and mushies. Bring to boil and reduce heat, cook uncovered for 25 mins or until thick.
Hardly gourmet but great for a quick dinner!

Pumpkin and sweet potato soup (make up with red curry spices and coconut milk if you're avoiding dairy, or for a change)
Can you get wheat-free couscous? I suppose you could use rice, or maybe quinoa or millet - add chickpeas, spring onions or red onions, cumin-y spice mix, maybe fried eggplant cubes.

That all sounds fab :) I forgot that pumpkin soup is something we already have quite often--it is delicious and easy to adjust to various dietary requirements.
Yep, am still eating eggs from the back yard chooks so will definitely be having lots of quiches :)

I go for lots of pasta dishes, tomato based usually but also avocado
roast veggie salad on greens with feta and toasted pine nuts (except maybe not the feta)
