Question: Is there any reason why you would shift to yellow/black from red/green in your routing? Would it even work with a star or bus configuration?
I also know how to install a multiline phone system from scratch.

However, I need an extension to power my computer (the 3-prong is across the room). Right now I am thinking of using 2 extension cords (I don't think 1 will reach) but it is a bit ugly. Would you suggest just buy enough cable and making your own extension cord?
You would for a second line along the same cable. Of course, you always introduce the risk for interference, but if it's just analog telephone, it shouldn't be a problem. It would work in both configurations if you keep your connections straight. If your star configuration is all home runs, there's even less potential for problems. If you have DSL going over the line, the potential for interference could be a real problem. I always prefer to give DSL a dedicated line, or at least run it over higher grade wire if it is going to coincide with the house line.
For the computer, your best bet is to get a surge supressor with an extended length cable. Using extension cords "permanently" is not a good idea, especially for high-draw devices like computers. If you do use an extension cord, use a good thick one that is made for high-draw.
Actually, I know what you mean. I have several times found myself with greater mastery of a subject that is only one of my peripheral "trades" than people for whom it is their primary.
