I never liked beets until someone once gave me a root veggie salad I couldn't get enough of - just sliced potatoes, beets, and carrots boiled then mixed with some mayo and green peas. So simple and so ridiculously good i could eat it for every meal.

raw beet salad

and i always see super good looking beet recipes on the new york times-

beets w/o staining your hands plus a recipe

beet risotto
borscht
