3C. All Purpose Flour
1/2 tsp. Baking Soda
1 tbsp. Baking Powder
1/2 tsp. Black Pepper
1/4 tsp. Salt
1/8 tsp. Cayenne Pepper
2 Large Eggs
1 1/3 C. Buttermilk
2 tbsp. Vegetable Oil
3 tbsp. Melted Butter
1C. Thinly Sliced Scallions
1C. Grated Cheese
1C. Diced Ham
1/2C. Diced Red Pepper.
Mix dry with dry. Mix wet with wet. Combine. Add cheese and ham and veggies to the combined mixture. The mixture will seem stiff but they turned out really nicely. Place heeping spoonfuls into a lightly oiled muffin pan and bake at 400 degrees for 20 - 25 minutes.
I used deli ham and some of a pepper jack cheese brick we had in the fridge. I think that made them a bit nicer then just using packaged ham and cheese. I don't see why you couldn't mix the meats and cheeses up, fiddle with it, make it your own. +)
They have more of a biscuit outcome then that of a muffin.
