baking with un-blanched almond meal (Trader Joes)

I'm planning to try my hand at some almond-based gluten-free brownies for a friend. I've seen really inexpensive almond meal at Trader Joe's, but it's made from un-blanched almonds.  I've seen blanched stuff but it's about 3x as expensive ( Read more... )

I do this semi often. MY experience has been that they need a little longer baking time than a flour based recipe. They turn out super tasty, but very fragile. They crumble easily. Good luck! I love TJ's almond meal. Grinding your own is a pain in the butt!

Look for a cheap Universal grinder at thrift stores to grind your own--I've seen them for like four dollars. Blanching your own would save mucho dinero.

What kind of grinder have you used - like a coffee grinder, or something else?

I use the same Universal-brand grinder I espouse above--mine even has a "nut butter" head allowing a very fine grind indeed.

here's a pic I found googling that is just like the model I have.

Ah, I didn't realize "Universal" was a brand, and I wasn't imagining something manual. Thanks, I'll keep an eye out.
