There really is no vegetarian substitute for salt pork, is there?

I'd love to be wrong. But I don't think I am.

No, but here's something else: collard greens, black eyed peas and southern green beans are more important than animal rights, world hunger, the prevention of colon cancer, or the environment. At least if you don't personally handle the salt pork and sort of avert your eyes when your mom puts it in the big pot.

I imagine that some manipulation of veggie bacon might serve as an approximation? But if you're a connoisseur, then you're probably better off with the real stuff.
