i was thinking about funnel cake all day today. i blame mrsquizzical. mmmmm. funnel cake.

so i searched for a gluten-free recipe, and found a universal one! \o/

1 1/4 cups flour
     (i used 3/4 cup sweet rice flour & 1/2 cup sorghum flour)
2 tablespoons brown sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 egg
2/3 cup milk (i used vanilla rice milk)

a) it WAS delicious. awesomely so, even.

b) i don't know; coconut oil burns hotter. are you allergic? maybe another oil that burns kind of hot... i use safflower oil for my chicken fried rice, so maybe that? it doesn't get as hot, but it could work, i don't know. i'm not anything close to an expert cook! /o\

Coconut is one of my weird things i am sometimes allergic to; shredded coconut, yes; coconut milk, no. I do not know enough about coconuts to guess whether that means I would be allergic to the oil! But I will seek out safflower and try things. *G*

maybe you react to shredded coconut because of the texture. my grandmother reacted to it (even though she loved it), along with lettuce and raw carrots, and other things of that texture.

if that's the case, you should have no problem with the oil. ;)

um. omg?

so, i think i always thought 'funnel' referred to the shape of the cake? and i think i invisioned something like a large, shaped brandy snap.

maple tried to explain what they were (they are referred to in arsenicjade's prisonverse) and i still didn't get it til i saw that.

i think i might have to try this!

DO IT! (also, i was thinking, they may be even better with a bit of cinnamon in the batter!) i hope the conversions are easy enough. =/

oh you should try it. Funnel cakes are tasty goodness. It's basically deep fried dough where you pour the batter out of a funnel so it get's that twisty stringy shape. so so so tasty. It's fair/amusement park/boardwalk type of food.
