I made the Imperial Fritters at Crafty one night. We started by making fresh cheese (similar to Paneer, but with vinigar instead of lemon juice) and then made the fritters. They were so amazing! I highly recommend trying it. Fresh cheese is shockingly easy.

I can tell I'm tired when I don't provide enough information :) I made the chhena I refered to from scratch, using lime juice. I've made fresh cheese a few other times as well, because, yeah, dead easy.
I'll probably stick with something store bought for this weekend in the interest of time, but will definitely go the completely from scratch route some other day.

Yeah, for time & ease, store bought cheese is the best. If I hadn't been having a bad Pennsic, I would have made them one afternoon because cooking them from scratch in camp would have kicked ass.
