I know I'm much more inclined to start the same way you are. Do I want soft or hard today? Aromatic or not? I think if the origin/time period is noted I will find that of interest and I may move over to choosing cheese that way sometimes. However, most of the time it will still boil down to "what am I in the mood to eat?".

*nod* I think my priorities would generally be Hard/Soft --> Time Period --> Region.
Fortunately, there's a lot of great cheeses that seem to be period for my persona and are pretty readily available. :D

Put it in a spreadsheet with sortable fields. That way you don't have to have it one way or the other. I might be looking for a Swabian cheese for a period meal and not care whether it is soft or hard.
Distribute said spreadsheet in Google docs.
Easy, peasy. Done.

Ooh. Where are you finding your sources?

(Italians are really good about making interesting cheese. I am less certain about the English, although they do love their cheeses...)

Mostly just Google searches for right now. A lot of what I'm finding is "Mentioned by Pliny" or "Michelangelo liked it!" which isn't much, but is at least helping to pare it down to what is most likely to be period. Once I have the chaff eliminated, I'll start in on primary source research.
