Cooking is blinding my life.

Okay, gave the horchata another try, and it was pretty awesome.

I used:

1/2 cup cashews
1/2 cup dates
1 stick of cinnamon bark (2" by 1")
1/2 cup cooked rice

Take the cashews, dates, and cinnamon bark and place them in a pitcher. Pour in two cups of water, making sure it covers everything. Let that soak for four hours, or overnight.

Drain the cashew mix when it is done soaking and place the solids into a blender. Add the 1/2 cup of rice and 2 cups of water. Blend the mixture until it runs smooth. Strain the horchata (using a cheese cloth, hemp cloth, or something that will catch the particulates in the mesh). Place the liquid back into the blender, and add another 2 cups of water and/or 1 cup of ice (to taste, the ice is not necessary if you are not drinking it right away). Blend everything again. Then enjoy.

An awesome way to have the horchata is in a milk shake. Take one cup of the horchata, add peanut butter, a frozen banana, and a flavoring (honey, chocolate, vanilla). Blend it all again and enjoy the extra creaminess.

My life otherwise has been quite boring. I got sick with the flu the last week, so I have been sitting in bed watching hulu and reading trashy vampire books. I am just not immersed in school at all and am ready to be working in the real world, as scary as that transition is right now. I have been spending my free time scan for fellowships and jobs, but a lot that are open right now are looking for people in the winter, and I won't be licensed until at least this time next year. On top of that, trying to move to another state after law school is seeming more and more painful and exciting at the same time. May be I am just looking for punishment, but it will be interesting to find out what type of job I end this search with.
