Hello all you lovely vegans out there in LJland- a question-

How do you make vegan mac and "cheese"? There is a vegan macaroni and cheese cookoff day here on the 20th and I want to try my hand at something new- got any tips and tricks?

(if you're in town- Lake Ella at 7 pm.)

you can buy a box of mac and chreese if you want it simple but there are tons of other ways too.
so there is this book that is called something like 100 ways to make vegan cheese, and my friend had made this amazing cheesy sauce from it using nutritional yeast, carrots, soymilk (or other nondairy milk), and spices, with pasta, and it was deeeeeellliiiicccciiiiioooooous!
try the library or even googling.
also check out veganpeople and vegrecipes, and so on! bon appetite!

As the other person mentioned, the nutritional yeast is one of the best ways to go. It has this really great smokey/cheesy flavor. If you want a traditional mac and cheese deal with a creamy unblemished sauce you'd want dusted onions and garlic powder. The powders can help thicken the sauce a bit, plus some corn starch. I bet some kind of kelp powder would also help thicken it, but it might discolor the sauce. You'd have to use water or vegetable stock to make the sauce as well. I'd personally use veggie stock or a stock made with konbu because then at least you'd get some nice oil out of it.

I want to try these quinoa elbows I bought recently, they look all gold colored and nice. :O
