The fat burning zone thing: I think you can pretty much ignore it. I think if you had an unlimited amount of time to exercise, it might have some value. Supposedly, you will burn more fat at a lower heart rate, if you take 35 minutes to burn 250 calories than if you take 20, but at a higher heart rate you burn more calories overall and also increase your cardiovascular fitness. You could spend your life grinding away on that machine and never really improve your fitness level if you keep it in that zone.
Besides, since the elliptical isn't fully weight bearing you have to work extra hard to get a really good workout on it.
