Recipe: Tuna Pancakes

Note: Measurements are approximate, as I did not use a recipe myself but simply added what looked good as I went along.

Ingredients
4 cans water packed tuna, drained
1 sleeve saltine crackers, crushed
1 quarter cup Parmesan cheese 
4 large eggs 
One half onion, minced 
One half red bell pepper, minced 
1 large celery stick, minced

I make something similar without the veggies. I use dill instead of parsley, and I grind up oats instead of bread or cracker crumbs. I don't know if the veggies will make a difference, but mine freeze beautifully.

I've also made them with canned salmon. Oh, and I have also made them baked in a 375 oven for 20 minutes or so. They don't really get brown that way. If you bake them for long enough to brown the way they do in a skillet, they get dried out. But I like to bake them if I'm making a giant batch to freeze.
