This is probably better than what I have done. But I'm off tofu now.. At least for a while. Definately not Silken Tofu. I can't imagine a use for that. In addition to be super soft.. it taste funny to me. Thanks for the recipe.

Silken Tofu is great for chocolate mousse, for cheesecake, and for other desserts. Some people like it cubed in hot-sour soup. One time I cooked cubes forever in vegie "chicken broth" until they were actually a little chewy and used them for tofu tetrazini. It was delicious. I used mom's recipe for turkey tetrazini and cut out about half the butter and it was still really rich. You wouldn't believe how much butter it called for!

Spring Stew
2 blocks firm tofu cubed 1/2 cup tamari soy sauce granulated garlic 1/3 cup vegie "chicken broth powder" (Frontier herbs has a good version)(optional) 2-4 large carrots, peeled and sliced 4-6 stalks celery, sliced 4-5 large potatoes, cubed 4-5 large onions, chopped 1/2 cup olive oil or butter
Place tofu in a pan with sides. Mix tamari and garlic with 2 cups water and pour over tofu. Bake at 400 (turning once if you like)until water is absorbed and tofu is desired consistency. Place vegetables, broth powder, and 1 cup water in deep roasting pan. Cover tightly and bake at 400 for 45 min., stirring occasionally and adding water as needed. When vegetables are tender, stir in tofu and add tamari to taste. Serves 6-8.
