Crockpot challenge day 15

Yesterday (as you may recall) I attempted to make chicken nuggets in the crockpot. The recipe seemed really easy and to the point. Take defrosted chicken,cut it in small pieces, dip it in batter, and stick in the crockpot with holes in foil in between the layers.

I honestly can't imagine chicken nuggets being good -- or turning out crispy -- in a Crockpot.

I don't recall ever seeing Velveeta in the refrigerator section, but then again I don't buy it much. In most of the stores around here, it's in some weird random place near the dairy case but not actually in it. Since it's not actual cheese but a "pasteurized processed cheese product," no need for it to be refrigerated. At least until after you open it. :) I use it on rare occasions, sometimes for nachos when I want that certain Velveeta flavor, but I don't buy it much!

What kind of chicken did you use? I was just reading (I think on the Year of Slow Cooking site) about chicken breast versus chicken thighs. I've always bought chicken breast, but have been disappointed in it because of it drying out -- not just in the crockpot, but also in the oven. I might have to buy some chicken thighs to see the difference.

I put chicken in the crockpot yesterday -- to have barbecue sandwiches for dinner. Turned it on low around noon, but I forgot to plug the crockpot in! OOoops!!! We ended up having pizza for dinner. We'll have barbecue tonight -- it's all cooked and shredded....just needs to be reheated.

Velveeta is weird. You can still find it in the refrigerated section at our grocery store, but it's not in a refrigerator -- it's on the shelves with the grated parmesan and spray can cheese. Eeeewwww!!!

Velveeta is sold in the fridge section of my grocery store. Weird. I cant imagine chicken nuggets in a crock pot being crispy, interesting!
