Seattle Summers & CSAs

Well we’ve had a couple of days in the 70s and my old bones are happy about it. But more importantly, our CSA is finally kicking into gear and giving us some veggies! Crazy you guys haven't had any summer yet. WTF? It's so hot here, everything is dying, yet I am still out there pounding the overgrown jungle areas and spots of bare dirt in my little patch of earth into a civilized yard that pleases my eyes and soothes my soul. yea I keep reading about heat waves, but we continue to keep it cool here in Seattle - tho I was gone for our wee heat wave a few weeks back. Every place has it's blessing and curse. For us summers are usually bliss with perfectly mild temps, sun 'til 10pm and water water everywhere to sail on, be by and reflect upon (tho only the bravest souls get in it).

Now I'll tell you I love me some beets. And I don't mind that Seth turns up his nose. I love them just about any way steamed & sliced plain, baked and tossed with a good gorgonzola & balsamic but mostly they never make it that far. I roast them up with a drizzle of olive oil, peel the skins and eat them as soon as they are cool enough to stand it. Seems like I'm always roasting them for some recipe that never gets made cuz not enough of them survive my sneaking.

Haha. So it goes with the beets I roast as well. They are so good, I always do them the same way - balsamic and goat cheese!

Thinking of you as I read and smiling cuz I just realized how much you and my girlfriend would like each other. :)

zucchini ribbons make a great substitute for pasta - tossed with some marinara, or maybe some fresh basil/diced tomato/kalamata/artichoke heart...

I've learned the hard way this season that zucchini doesn't do well in containers. I should have reasoned that out, but oh well. Next year....

well *I'm* game for ribbons and pasta not so sure about Seth. But I am thinking I'll make my lasagna and substitute zucchini for noodles. Seriously, I've got about 6 large z's this week and still about 3 from last week and that's not counting the crook-necks. But I've got an squash-chana dal i'm going to try with those.

I don't know if it works because I haven't tried it, but how about a zucchini parm instead of eggplant parm? And can you can zucchini? Seems like some "fresh" preserved zucchini spears in the winter might be a good thing. (Course, maybe they just get soggy...)

Zucchini boats stuffed with any yummy stuffing you like and baked to perfection.

I can see that zucchini could be a challenge after a bit

yea i had that same thought about zuccini parm - and the same concern. I have now thrown it into a stir fry and a big batch of scrambled eggs.

But what I really need to do is learn how to make some zucchini pickles - wouldn't that be fantastic in the middle of winter.

zucchini pickles sound like a great idea...and I'll bet they would be easy. It's really just pickling liquid and whatever you want to toss in right? I imagine they'd hold up well to a deli pickle kind of flavor (sometimes called half-sour...you know the ones? Lots of garlic...).

Maybe a dinner of decadence with some fried zucchini rounds and some lovely raita type of dip or something?

I love fresh veggies myself but your challenge with zucchini's has been the kind of thing to keep from signing onto a CSA. Then again....what's better than fresh?

yea...... and i just looked up a gluten free one that i think i have all the ingredients for.

I miss you too. I know you are just a phone call away, but it would sure be nice to give you a hug in person.
