I tend to prefer "lunch" foods at breakfast. I can eat a sandwich in the car, whereas cereal is a challenge. Going low carb i'd say try pitas or wraps or fritatta, although the latter is not so portable. Lunch is a free meal, but who says you need to pig out on it? Could always go for the happy medium. That's usually the choice that is sustainable.
Oh, Nate. You do tend to go all-in for stuff, it seems. Glad you noticed the protein deficiency before you fell over!
On to brekkie breks: eating a sandwich or a cup of dry cereal/granola for breakfast is nice and portable. I don't mind eating in the car if the driving isn't full of turns and the food is non-fussy, one-handed fare. You may differ, though.
On dinner, well, it depends what you can manage and when. Breakfast on the go I'm used to doing, dinner not so much. In fact I will likely riot if I can't relax with something resembling "real dinner." So I'm virtually no help!
Don't forget your non-animal proteins, either - legumes! Hummus, peanut butter, beans in general, all are good.
