With the third person, there is something called "psychic distance" that you can play with. It's basically a measure of how deep into the heads of the characters that you go. You can even vary it by character; keeping a long distance from some and going in quite close with others, whatever you think will suit the story best. I like playing with psychic distance; it's one of my favourite things to do and you can create such wildly different effects with it.
As for balancing the characters' voices and styles with your own... I'm not sure I have any useful advice for that. That's a good question, and I think something only experience will be able to teach you effectively (that, and reading lots of stuff by people who do it well).
I'm willing to be a beta, but I'm not familiar with the canon (at all), so I'm not sure how useful I'll be in that regard.
