Shiitake Mushroom Risotto

I had forgotten how long a risotto takes to make properly as well as the amount of stirring involved.

I also forgot how risotto multiplies in the pot.  I now have enough risotto for conservatively 8 meals. Will freeze some.

Have I mentioned that I never quite got the hang of cooking for one?
