i have a flank steak marinating at home in a pineapple juice/rum/brown sugar mixture, and i'm thinking up a recipe for a ham/potato/corn chowder. [sigh] i have too many ideas and not nearly enough time to cook them all (especially while on sea duty ( Read more... )

The trick to a cream soup is to make everything like you would a non-milky soup, and then add the milk stuff right at the end. Hopefully you won't poison your guests like I did. :(

Off the cuff, I would melt some butter in a deep stewpot, then GENTLY fry an onion until it's very brown. Then add the ham and potatoes and brown, then add about 2 cups of broth. Don't forget the black pepper. If you're feeling cholesterol-prone, skip the butter and ham and use bacon and the bacon dripping. After the potatoes are cooked in the broth, add the corn, cook till done, then 2 cups of whole milk. Sound about right?
