Have you ever tried freezing them? We couldn't eat two dozen cupcakes before they got stale...I'm assuming they're not frosted if they're being frozen...

I have not tried freezing them; every time I've had reason to make cupcakes, I've had LOTS of people around to eat them! This last batch -- we had them for dessert for my SIL's birthday dinner on Saturday, then sent a few home with them, then had them for dessert when Mom had friends over Sunday evening, then I took the last five to work with me.

If the winner of the raffle would happen to prefer a smaller batch, that is do-able. The lemon poundcake recipe makes two dozen, but I could split the recipe; my vanilla cupcake recipe makes only a dozen, but I just assumed I'd double it in order to provide two dozen.

The other thing is that, if you were to win the raffle, you could time delivery at some time when you'll have lots of people around to eat them, like if maybe Camp Cheesy Poof would like cupcakes for EK War Camp in July!

Freezing works really well if you do it while they're fresh. You can't really re-freeze them, but all the safeway cakes and cupcakes are frozen solid when they come in. And they're still tasty.

Good to know! I'm guessing it's freeze while fresh, then thaw, THEN ice? Or are they frozen with the icing?

You should be able to freeze the frosting too. When I was doing cake decoration, most of the time they would get put in a rack in the walk in freezer to keep them fresh and looking nice when the customer picked them up.
