What kind of setup do you have? I'm not big on pond plants, but I could easily see them having high light requirements. Have you thought about growing things like swords or anubias out of water? Or maybe going with a paludarium style enclosure and using semi-aquatic plants? Elephant ears might look nice, but you'd have to be ruthless with trimming. I had a cheap LED light directed at a small illustris elephant ear plant growing out of one of my HOB filters and that made a nice effect. As far as pond plants go, I have some bogwort and lily pads in my tank. The addition of Flourish Excel looks like it has stunted their growth, but everything else I have loves it. :\
I've kept a planted tank for a couple years now and only bought an unidentified, narrow-leaved sword (?) - the rest: dwarf hairgrass, baby tears, and raccoontail (and a few others?) came from local ponds and streams. You will need more light to support a planted tank. I had about 2 watts per gallon and really needed to have about 3 for the pond plants. When you get your plants, especially if they're wild, rinse them well and keep them in a separate tank or bowl for a few days - watch for algae or other critters that you don't want in your system.
Plants with broad or round leaves work best with bettas, I've found - at least my betta. The hairgrass, although very pretty, tore up my halfmoon's tail.

How large are the water soldiers? I'm not familiar with the plant at all and the pics I've seen make them look pretty big.
