Hi ma'am!
opo, kuya Danny is really nice. he was the one who taught us (ira and I) how to dish out rice. I now know the weight of the rice for each meal (jumbo A,B,C, beef, chicken, and the bento boxes). He also taught us how to make tempura na po. I was able to cook 2 orders! Kuya Danny even let me stir fry the Yaki Udon. He also gave us inside scoop on the beef juice, that it is imported from Japan, and that it isn't taken out of the stainless steel cookware (?) because it gets better through time. He wonders if you still know the proportions of each ingredient in each dish because he knows ALL by heart! sabi po niya you were very makulit and very nice. dulasin din daw po kayo, hahah:)) he told me not to tell you po baka magalit daw kayo, hehe:)) Because I was able to work for 8 hours today (my 1 summer class had a free-cut), I was able to back-up again for the condiments (shredded cabbage, raddish, ginger) and iced tea (red, apple, and green), and I was able to prepare 10 sets of Nippon vegetable salads.
yes mam, because Yoshi mega is a fast mover resto, the kitchen peeps are very busy and very quick to move. if a manager speaks at a normal voice the crew wouldn't hear. But yeah, it isn't a good way to make people follow. I think ma'am the best way is not to speak at the top of your voice because it isn't just stressful, the crew get intimidated too. Their work might get jeopardized because of nervousness and inis.
I also noticed po that the managers (even Kuya Danny) measure the internal temperature of each ingredient (the cooked rice, the cooked chicken, beef, and whathaveyou's) using a digital thermometer and there's a specific temperature for each, like its 70 degrees for the rice. Today I noticed also that the crewmembers clean their kitchen floor regularly (by pouring detergent all over the floor and scrub it and then mop it). This maintains the cleanliness and sanitation of the work place.
I was also able to notice that the managers check the cookware and their stoves for cleanliness. Kanina there was this maintainance guy checking the deep fryer and one of the POS system also. This ensures that all of their wares last for a good number of time.
Today sir Deo asked us if we could report for work on Megamall's Mega sale, because they need people. Ma'am, we're nervous, because one friendly kuya there told us that it is very toxic. If there's any consolation, losing weight would be VERY nice po. HEHEHE. JOKE LANG MA'AM!
SPeaking of weight issues, the managers there often joke ira and me about our weights, HAHAHA! but its fine naman po, at least we get to crack up jokes with everyone which makes us feel part of the team=)
